ارزیابی کیفیت گوشت ماهی شانک مخطط (Rhabdosargus sarba) نگهداری شده در یخچال با استفاده از روش شاخص کیفی

چکیده
روش شاخص کیفیت ماهی شانک مخطط نگهداری شده در یخچال انجام گردید و کارایی آن برای ارزیابی تازگی با روشهای ارزیابی رنگ، میکروبی و فیزیکوشیمیایی مقایسه شد. روش شاخص کیفیت نشان داد که طول مدت ماندگاری ماهی شانک مخطط نگهداری شده در یخچال 9 روز بود. آنالیزهای فیزیکوشیمیایی (TVBN، pH، TBARS و FFA)، میکروبی (مزوفیل، سرمادوست و انتروباکتریاسه) و ارزیابی حسی در روز های 0، 3، 6، 9 و 12 نگهداری انجام شدند. تغییرات میزان TVBN، pH، TBARS و FFA در کل دوره نگهداری مشاهد شد. ارزیابی حسی تغییرات را به طور معنیدار نشان داد و همبستگی معنیدار  در ماهی شانک مخطط نگهداری شده در یخچال طی زمان نگهداری مشاهده شد که نشان دهنده کاهش کیفیت ماهی می باشد. روش شاخص کیفی یک ارتباط خطی با زمان نگهداری (23/7-خطی زمان نگهداری× 23/8= روش شاخص کیفیت، 988/0R=) نشان داد و زمان ماندگاری ماهی شانک مخطط می تواند با دقت ±3 روز تخمین زده شود. آنالیز رگرسیون با استفاده از محدوده قابل قبول برای باکتری های مزوفیل (log cfu/g 7) نشان داد که ماندگاری ماهی شانک مخطط نگهداری شده در یخچال 9 روز بود. آنالیزهای TVBN، pH، TBARS، میکروبی، رنگ سنجی و حسی همبستگی خیلی بالا با زمان نگهداری دارد و ممکن است به عنوان شاخصهای مناسب برای ارزیابی طول مدت ماندگاری ماهی شانک مخطط نگهداری شده در یخچال بررسی شود.
